Philosophy of ingredients

The pillars on which the proposals of the Cascina restaurant are based are the wholesomeness, freshness and very high quality standard of the ingredients.

My research is very wide but always leaves intact the wonderful scents that nature has gifted to Piedmontese ingredients.

Lightness and closeness to tradition are the objective of each and every dish I invent or, simply, interpret with humility and passion.
